Chocolate Truffles

Chocolate Truffles

1/2 cup Coconut oil (when melted)
1   Cup Cacao nibs ground
1/4 Cup Cacao Powder
1/2 Cup Mesquite
2   Tablespoons Agave Nectar
1   Tablespoon Vanilla Extract – organic
Pinch of sea salt

1.  Melt the coconut butter slowly at a very low temperature
2.  Mix together all the other ingredients and then stir in the coconut, agave and vanilla
3.  Press into ice cube tray
or truffle pan

Banana and Greens Smoothie

Banana and Greens Smoothie

Ingredients:

2    bananas
2    tablespoons hulled hemp seed
1    bag of frozen blue berries
2.5  cups pure water
1    teaspoon super foods of choice (optional)
3    leafs of kale

Directions:

1.   Put all ingredients into your high speed blender
2.   Add enough water so that all ingredients are covered
3.   Blend well

I like to add a bit more water to thin it out.  You can experiment here…

Things I add at random

1    Tbsp Flax seed
1    Tbsp Hemp Oil
1    Apple

However, simply be creative.  If you don’t have Kale, use another green leafy vegetable.  The point is, have fun

Thai Coleslaw

Thai Coleslaw – Serves 4

Ingredients:

1/2   Cup raw cashews
1/2   Cup lemon juice
2     Tablespoons chopped ginger
1/2   Tablespoon red chili
1 1/2 Tablespoon tamari
1     Cup raw almond or peanut butter
1/2   Head white cabbage, shredded
1/4   Cup red cabbage, shredded
1/4   Cup carrots, shredded
1     Ripe mango, cut in small dices
1     Handful cilantro leafs
1     Handful torn basil leafs
Himalaya sea salt
2     Tabelspoons honey or agave nectar (or 1 tbsp and few drops stevia)

Directions:

1.  Cut the mango small cubes
2.  Shred the cabbage and carrots
3.  In your high-speed blender, mix the honey, lemon juice, ginger and red chili
4.  Add the raw almond butter and blend at low speed to combine
5.  This will get a thick consistency. Add water to thin if necessary.
6.  In a bowl mix the cabbage and the raw almond butter mixture really well.
7.  Add the raw cashews and mango pieces
8.  Top with leafs of cilantro and basil and a few pieces of mango and or carrots for color.

Tomato Olive – Serves 4

Tomato and Olive Salad:

Ingredients:

1 part olives

4 parts cherry tomatoes

Cold pressed extra virgin olive oil to taste

2 tbsp lemon juice

Basil and pepper to taste

Greens of your choice

Preparation:

1.  Remove juice and seeds from the cherry tomatoes

2.  Mix the olives and tomatoes together in a big bowl

3.  Add the lemon juice, pepper and olive oil

4.  Toss, then add the basil and greens

Spinach Leaf Wrap

Spinach Leaf Wrap –  Serves 4

Ingredients:

1/2   Cup hemp seed or substitute Flax if needed
1/2   Cup lemon juice
1/4   Cup honey or 2 -3 drops of Stevia for sweetener
11/2  Tablespoon chopped ginger
1/2   Tablespoon red chili
1     Tablespoon soy sauce
1     Cup raw almond butter
1/2   Head shredded cabbage
6     Very large spinach leafs
1     Carrot
1     Mango
1     Handful cilantro leafs
1     Handful torn basil leafs
Sea Salt

Directions:

1.  Cut the carrot into into long strips.
2.  Cut the Mango lengthwise, also into strips about 1/4 inch.
3.  In your high-speed blender, puree the…
Honey (or Stevia)
Lemon juice
Ginger
Red Chili
Soy Sauce
4.  Add the almond butter and blend at low speed to mix thoroughly.

You will arrive at thick consistency. Add a small amount of purified water to achieve the consistency you like.

5.  In a bowl, mix the Almond butter dressing with the cabbage, tossing it until completely mixed together.

6.  Place the spinach leaf on a cutting board and put some of the cabbage mix on the leaf.
7.  Add some seeds, sticks of carrot, pieces of mango, a few leafs of cilantro and basil.
8.  Roll up and the spinach leaf and use a toothpick to keep it together.

Coconut Refresher

Coconut Refresher – Serves 1

Ingredients:

1/2 cup coconut water
1 cup coconut meat
1/2 teaspoon vanilla extract

Directions:

1.  Open the coconut.  You can tap into the coconut and drain out the water and then wrap it in a towel and hit it with a hammer.
2.  Pour the coconut water into a high speed blender.
3.  Pour some or all of the milk.
4.  Put in the coconut meat.
5.  Blend well.

You should get a thicker consistency. Add fruits of your liking for an added flavor.

Apple Banana Delight

Apple Banana Delight – Serves 2

Ingredients:

2 apples
1 banana
1 tablespoon golden flax seed
2 teaspoons cinnamon
Pure water
Directions:

Soak the flax seed in purified water overnight or at least 4 hours.

1.  Peel the apple, slice it up and put it in the blender
2.  Peel the banana and put in the blender
3.  Rinse the flax seeds and put them in the blender
4.  Add the cinnamon
5.  1/4 cup of purified water. Not too much water.  Just enough that it mixes well and has as nice smooth consistency. Feel free to add a bit of water at a time to get the consistency you like.

I like to add some sunflower seeds or pumpkin seeds and even use Almond Milk for a base rather than water.  That’s the nice part…let your imagination go wild.

You can use any blender you wish…hand, high speed like the Breville or whatever blender you have.
